1. Natural blue goes mainstream
With spirulina and gardenia blue now approved in more markets, blue is no longer a "problem color". We see it in sports drinks, plant-based ice cream and rainbow confectionery — often paired with yellows to create natural greens.
2. Colors with benefits
Lycopene, beta-carotene and anthocyanins carry nutritional stories of their own. Brands increasingly highlight that the color is the functional ingredient, especially in gummy vitamins and wellness shots.
3. Heat-stable reds for bakery
Beetroot has long been limited to cold applications. New encapsulated grades now survive baking and UHT, opening red velvet cakes and strawberry fillings to natural solutions.
4. Regional shade preferences
A "strawberry red" in Japan is often pinker than in the US, while Southeast Asian consumers prefer more saturated tones. Localized shade matching is becoming part of every global launch.
