Wide pH Stability
From acidic sodas to neutral dairy, our colorants hold their intended shade across the pH range of real-world food systems.
Many natural pigments are pH indicators: anthocyanins, for example, move from red to purple to blue as pH rises. We select raw materials with naturally acylated pigments and apply co-pigmentation to widen the stable window.
Every product in our catalog is tested in buffered solutions from pH 2 to pH 10. The documented stable range is where the color difference ΔE stays below 3 after 24 hours — a shift that the human eye can barely notice.
Test Method
0.1% colorant in citrate-phosphate buffer, 24 h at 25°C, CIELAB ΔE measured by spectrophotometer.
